Ingredients

For the Cauliflower Steaks:

  • 1 large head of cauliflower
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt & freshly cracked black pepper


For the Herbed Tahini Sauce:

  • 1/2 cup tahini
  • Juice of 1 lemon
  • 1 garlic clove, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 3–4 tbsp water (to adjust consistency)
  • Salt to taste


For Garnish:

  • 1/2 cup pomegranate seeds
  • Extra herbs for sprinkling
  • A drizzle of olive oil


Instructions

Prep the Cauliflower:
Preheat your oven to 200°C (400°F). Remove the outer leaves of the cauliflower and trim the stem, keeping the core intact. Slice into 2 cm thick "steaks"—you should get about 2–3 good ones from the center.

Season & Roast:
Place the steaks on a lined baking tray. Brush with olive oil and sprinkle with cumin, paprika, salt, and pepper. Roast for 25–30 minutes, flipping halfway through, until golden and tender.

Make the Herbed Tahini:
Whisk together tahini, lemon juice, garlic, chopped herbs, salt, and enough water to reach a creamy, pourable consistency.


Assemble
:
Place cauliflower steaks on a serving plate, drizzle with herbed tahini, scatter pomegranate seeds, and finish with a drizzle of olive oil and a touch of fresh herbs.
